There’s nothing like hearty Paella on a dreary lockdown day. If you’re homebound and hungry for authentic Paella and Spanish dishes, we’ve found a hidden gem in Manila that lets you have your cake – and eat it, too.

Founded only in 2020, La Oliva Comida Casera has garnered a loyal following, thanks to its heartwarming collection of heirloom Andalucian recipes. This family-run business whips each dish using organic ingredients, and fresh, locally sourced seafood that will transport you to the famous coastal town in Canary Islands that’s its namesake.

The recipes were passed down from the family’s grand matriarch, Remedios Fernández y Granada, from whom La Oliva’s best selling Callos de Remedios was named after.

La Oliva started with Callos de Remedios, and has since expanded their offerings to four homecooked paellas. Ranging from all-seafood paella to a paella with crackling chicharrones, all four variants make for good brekkie, lunch, and dinner staples – and for many, a star during family gatherings.

The dish that started it all, Callos de Remedios is a rich, addictive stew that combines fresh garbanzos, green olives, and Spanish chorizo with beef knuckles and tripe, which is slow-cooked to perfection over a period of two days.

Paella

La Comida’s newest addition features perfectly seasoned pork belly, double-fried to a crisp, then laid over a bed of creamy saffron rice and homemade aioli on the side.

La Paella Granada

This lovely Granadino dish marries arroz mediano with a creamy saffron base, generous servings of Spanish chorizo, and fresh seafood, and a dash of fresh coriander. It comes with their signature pimentón aioli.

Crab Claw Paella

This modified La Paella Granada makes use of La Oliva’s signature saffron paella and roasted garlic and aioli, then topped with meaty crab claws and slathered with 100% crab fat. It comes with a dash of coriander, lemon, and homemade pimentón Aioli.

Initially called “Everything on it paella”, this rich paella merges La Oliva’s bestsellers – La Paella Granada and Crab Claw Paella – for one packed, party-perfect feast. Overflowing with locally sourced crab claws, blue crabs, tiger prawns, and mussels on a bed of creamy saffron rice, Paella De Fiesta De Marisco is a complete meal that says “fiesta” like no other. It’s finished with fresh coriander and aioli.

Chorizo Anda

This Spanish favorite features a pork-based chorizo sourced directly from Spain that’s brimming with roasted garlic and pimentón de La Vera.
